A Thai Twist on Bananas

Thai food is rich in flavour, rich in aroma, and rich in variety. And, despite its richness, it's simple to make.

One of my favourite recipes (I have many favourite Thai recipes!) isn't even a recipe so much as a nudge in the right direction. It's for Banana Spring Rolls, and they're a sweet, easy dessert that's perfect for company.


Banana Spring Rolls
Serves 6 (2 per person)
3 bananas
12 spring roll wrappers
water (for gluing the spring rolls)
1 cup oil
1 can condensed milk, divided into six small dipping bowls
  • Peel bananas, cut halfway down the banana, then cut each half into quarters lengthwise.
  • Heat oil on high in a wok.
  • Place two pieces of banana in the middle of a spring roll wrapper, and wrap tightly, dabbing edges with fingers dipped in water to seal.
  • Cook a few rolls in the wok at once, just until golden brown. Place on a paper towel to remove excess oil, and serve hot with condensed milk.

Mm - that looks like real comfort food, although I'd love to eat it sizzling hot from some roadside stand in Thailand!

Oh I agree, much better from there!! Next I'll have to figure out the square, stuffed, and folded Thai pancake!
