More Chocolate!

Now that Easter Weekend is over, and we're all recovering from chocolate-overdose induced comas, it's time to reflect on the delicious delicacies we've all indulged in over the past few days.

The main ingredient in the majority of these foods? Chocolate. Chocolate eggs, chocolate bunnies, chocolate anything, really.

My personal favourite chocolatey treat: Bird Nests. They take just a few minutes to make, and even less time to eat. So in a few weeks, when you begin to feel the chocolate withdrawals begin, whip up a batch of these beauties.

All you need is 6 ounces of dark chocolate, 2 cups unsweetened shredded coconut, 2 tbsp fancy shredded coconut, and a bag of Micro Mini Eggs.

First, melt the chocolate in a double boiler. Stir in the unsweetened coconut, and scoop the mixture by the tablespoon on a parchment-lined cookie sheet. Press down the centre of each of the mounds slightly to make a nest shape. Sprinkle the fancy coconut over the nests, and place three Micro Mini Eggs in the pressed down area. Refrigerate for 1/2 an hour, and you're done!

If you need an excuse to make them, they're perfect for a baby shower or a children's birthday party - or just a night in with the girls and a bottle of Oyster Bay Cuvée Rosé.
